Would second postfix over sendmail. Check out Slicehost wiki and forums for
setup details: http://www.slicehost.com/community

Another option I use for one of my clients is to use Google apps to handle
email from Slicehost. There are some limitations depending on the plan, free
or paid, so caveat emptor (read the fine print/FAQs), but you can setup MX
records for each one of your domains and Gmail and its spam filtering comes
along for the ride or you can use POP since Gmail supports that.
