[Ruby] Hosting

I use Digital Possibilities (http://www.digiposs.com)...  They'll  
pretty much set you up with whatever you want.  I run a bunch of  
domains/sites through them and I've been very pleased with their  
performance.  Plus I happen to know for a fact they just installed  
some kick-ass servers for Rails hosting.  The owner is also Rails  
developer so he'll make sure you've got what you need.

I don't work for them or anything, just a happy customer.
